  1. 5 eggs
  2. 2 ripe bananas
  3. 1⁄4 cup coconut oil or butter softened
  4. 1⁄2 cup coconut flour
  5. 1 tsp baking soda
  6. 1 tsp vanilla extract
  7. a small amount of milk to thin may not need


Preheat oven to 400°F. Grease muffin tins. Put all ingredients in medium sized bowl and whisk using strong whisk or immersion blender. Mix until smooth and well incorporated. Batter should be thick, but if it is too thick, add a little milk to thin, but don’t let it get runny at all. Spoon 1⁄4 cup into each hole of prepared muffin tins. Bake for 13-18 minutes until lightly browned and set in middle.

  1. 2 eggs
  2. 1/2 cup coconut oil or olive oil
  3. 1/3 cup honey or maple syrup
  4. 1/4 cup milk or Greek yogurt
  5. 1 teaspoon vanila extrat
  6. 1 cup mashed ripe bananas about 2-3 medium bananas
  7. 1 3/4 cups white whole wheat flour or regular whole wheat flour plain all purpose flour
  8. 1⁄2 teaspoon ground cinnamon optional
  9. 1 teaspoon baking soda
  10. 1⁄2 teaspoon salt
  11. 1/2 cup dark chocolate chips or chopped walnuts, raisins, optional



Pre-heat oven to 325F. Grease a 9×5 inch loaf pan and set aside. In a medium bowl, whisk the flour, cinnamon, baking soda and salt. Set aside. In a large bowl, beat eggs, oil, honey, milk and vanilla for 2 minutes. Stir in the bananas, flour mixture and chocolate chips (or any other add ins of choice. Pour batter into greased pan, sprinkle with some more cinnamon, raw sugar, or banana slices (optional) Bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, slice and enjoy!


To make this bread gluten free: gluten free flour. For dairy-free/vegan: use almond milk and flax eggs and maple syrup.

  1. 1 3⁄4 Cup White whole wheat flour
  2. 3 large Ripe bananas mashed, about 1 cup
  3. 1⁄3 Cup Coconut Oil
  4. 1⁄2 cup Honey or maple syrup
  5. 1⁄4 cup Milk of choice we used almond milk
  6. 1 Tsp Baking Soda
  7. 1 Tsp Vanilla Extract
  8. 1 tsp Baking powder
  9. 1⁄2 tsp Ground Cinnamon
  10. 1⁄2 Tsp Salt
  11. 2 Eggs



Preheat oven to 350F In a bowl, add all the dry ingredients: flour, baking soda, baking powder, salt, and cinnamon. Mix and set aside Next, using a separate bowl, mix the mashed bananas, coconut oil, honey, vanilla, eggs, and milk. Pour the wet ingredients into the dry flour ingredient. Mix together until well combined. Using cooking spray, grease the bread pan, and pour the batter into the pan. Bake for 40-45 minutes until a toothpick comes out clean.


Flour – we used whole wheat flour, but you can use a mix of different flours like gluten-free, white, spelt flour, or oat flour. Sweetener: you may use honey, agave, maple syrup, or any other sweetener like monk fruit sweetener. Make sure you use ripe bananas Oil: Any neutral oil will work. We love using coconut oil Milk: we used almond milk, but you can use any milk of choice
